Lasagna





This is yet another Mom recipe. I LOVE this lasagna. I crave it, and so does anyone else that tastes it.
We had some neighbors over for dinner a few months back, and the husband lived in Italy for 2 years. He said my lasagna rivaled the lasagna he had there.  But I'm not bragging... ;) 

Now, you will notice I use cottage cheese. Don't panic. You can use the more traditional ricotta if you desire. I don't like the texture of ricotta, so I use cottage cheese. Just trust me and use it the first time. You won't be disappointed! (It's also cheaper!)


Lasagna

1 lb hamburger or ground turkey
1 clove garlic, minced
1 TB basil
2 6oz cans tomato paste
2 16oz cans diced tomatoes
10 oz lasagna noodles
2 eggs
1 cup Parmesan cheese
2 TB parsley
1/2 teas pepper
3 cups cottage cheese
1 lb mozzarella cheese, grated

Brown meat, drain off fat. Return to large sauce pan, and add garlic, basil, tomatoes, and tomato paste. Simmer uncovered for 30 min. Stir occasionally.

During the last 15 minutes of simmer time, cook the noodles until tender, drain, rinse.

Beat eggs in a large bowl. Add cottage cheese, parmesan cheese, parsley, and pepper. Mix well.

In a 13x9 baking pan, layer noodles, 1/2 of the meat, 1/2 of the cottage cheese, and 1/2 of the mozzarella cheese. Repeat layers, ending with cheese.

Bake at 375 for 30 minutes.

Let stand 10 minutes before serving.

You won't need much else to compliment this meal. Some French bread with Garlic Seasoning, and a nice salad will fill out the meal.

  1. Lasagna is one of my favorites! We've always used cottage cheese, too. Unfortunately, none of my kids like lasagna, so I rarely make it. Gosh, now I'm craving it;o) May have to go out and get some for myself soon.

  2. Your Lasagna sounds delicious. This would be a fantastic offering to take to a covered dish supper.......but I'm wondering if you mean "1 2# can diced tomatoes (or 2 16oz)" OR should it read, 1 1# can diced tomatoes (or 2 8oz cans)? Thanks in advance.

    Thanks for the catch! I must have looked at the huge can of tomatoes incorrectly! 2 16 oz work just fine. Thanks!
