Perfect Guacamole





Guacamole. Just hearing that word makes me giddy. You all know how much I love Mexican. Guacamole is the ala mode of mexican. This is a recipe I've worked on until I think it's pretty perfect. Try it for yourself!

The measurments are not exact- it's more like add what you want until it's enough! (Sorry about that for all of you "must have measurements" people!)

Perfect Guacamole

2 Ripe Avocados (or more if feeding a larger crowd!)
1 big spoonful of Sour Cream
2 big spoonfuls of your favorite salsa
2 green onions, sliced
2 garlic cloves (I use pre-chopped, so I use about 1-2 teas)
1/3 cup chopped cilantro
salt and pepper
1 teas lemon juice

Cut and chop the Avocado into small pieces. For a great tutorial on avocados, including how to cut them, see OurBestBites.com.

Mash the avocado in a bowl until desired consistency. I like mine chunky. Add in the rest of the ingredients, mixing together. Eat immediately, or place in refrigerator to let flavors meld.
HINT: When refrigerating guacamole, place plastic wrap directly on the surface of the dip. This will help it from turning brown!

Enjoy as a dip (use chips, not your finger!), or as a garnish on burritos, fajitas, enchiladas, etc!
