Healthy Salad for a New Year!

Happy New Year! I don't know about you, but I'm all sugared out. I'm craving a big, crisp salad with lots of fruits and veggies. This salad has it all! Yes, there are cranberries in this dish. I'm not a cranberry fan, but they are perfect in this salad. You could also substitute raisins.

This is a re-post from last May. With trying to get my blog back up and running after some changes, new recipes won't be up until later this week. For now, please enjoy this yummy salad!

Spinach Salad with Spiced Pecans, Apples, Feta, and Cranberries

Fresh spinach leaves, washed and stems trimmed off.
Dried cranberries
Granny Smith apple, cut into thin slices or cubes
Spiced Pecans (Regular Pecans are fabulous as well! Or, you can buy the candied ones in the store.)
Feta cheese
Balsamic dressing

Salads are so easy! Just mix all of the ingredients together in the quantities that you like! Easy peasy!

Apples!

Last week I did some Caramel Apple for some former clients. If you didn't know, I used to run a business called Double Dipped Sweets. The Caramel Apples were amongst the products handmade by me. I'm told that they are addicting, and said clients needed some "NOW"!

I was surprised how relaxing it was to fill these few orders. One of the reasons I stopped DDSweets was because of the stress. It was getting to be too much for 1 person. But, making these was fun. It was relaxing. It was so nice to get back to what I love making. And, since I was having so much fun, I decided to grab the camera and share my fun with you!

"An apple a day..." But plain ones are so boring...

They need toppings. Like luscious, smooth caramel topped with Almonds, Pecans, Coconut, and Oreo cookies... but not all together!

Oh, yeah. Now that's better.

Now, the following pictures are just to make you drool. I'm not really sorry about that either.

Drooling yet?

And here are my babies, all wrapped up, ready to go to their new homes...
to be devoured...

A big thanks to my former clients for remembering me, and allowing me to have some fun!
