Since we just had Thanksgiving, I thought some Mexican food might be in order, just to have something different! This recipe is quick and easy; very versatile; and the flavor is truly amazing!
Recently, I spotted a dish from a restaurant that sounded really, really good. Honey Chipotle Chicken! I haven't tried the ones at the restaurant yet, but I thought I'd give it a try at home. It was perfect. The lime and honey added smoothness and tartness; with the chipotle adding it's smokey kick.
If you've never used Chipotle in Adobo Sauce before, no fret. It is found in the mexican aisle by the salsas. You only usually use one pepper, and maybe some sauce. It's really spicy! The rest of the chipotles and sauce can be chopped up, placed by Tablespoons into ice cube trays, and frozen for later use!
Now, on to the recipe!
Honey Chipotle Chicken
The Double Dipped Life
In a bowl, mix the following ingredients:
6 Tb honey
5 Tb lime juice (1 large lime)
1 Chipotle Pepper in Adobo Sauce, finely chopped
1/2 - 1 teas Chipotle sauce
1/2 teas garlic pepper
Add 3 cooked chicken breasts, or the meat off of one rotisserie, and toss. Let the chicken marinate for at least an hour, up to overnight.
Isn't that easy? You can now use the chicken for so many yummy things! Use in Quesadilla's, burritos, enchiladas, taco salads... any Mexican dish you want!

Honey Vinegar Ice Cream with Raspberries and Candied Almonds
There's been some skepticism that the Honey Wine Vinegar actually tastes good on ice cream. I am here to tell you that it does! It is the most amazing thing! The vinegar smell is a little off-putting, but then, when it's in your mouth... mmm...
Here I used Vanilla Ice Cream, Raspberries fresh from the Salt Lake City Farmer's Market, and Toffee Cinnamon Almonds from Nutty Guys.
Drizzle a little Honey Wine Vinegar over the top, and you've got an amazing, and simple, dessert!

Honey Almond Green Beans
Here is a simple, but delicious side meal. Cook your beans, add the honey to taste, and you are set! I know the touch of sweetness definitely helped my kids enjoy these more.
Honey Almond Green Beans
Green beans (fresh or frozen)
2 TB Honey (or more to taste)
Sliced Almonds
Cook green beans according to package directions. Drain, and stir in honey and sliced almonds. Taste, and add more honey if needed. Serve warm.

Peanut Butter Popcorn
Sssh... I'm giving you this top secret recipe as a Christmas gift! Don't tell anyone! Ssssh....
Why is it such a big secret? Because I used to sell this popcorn in my shop- Double Dipped Sweets!
But, this popcorn is sooo amazing, that I just have to share!
Chewy peanut butter goodness, with a touch of honey... mmm... this was one of my popcorn flavors that I could sit and eat and eat and eat...

Chewy Peanut Butter Popcorn
Makes: 3 Qts of popcorn!
1/2 cup unpopped popcorn, or 2 bags microwave popcorn
1 cup sugar
1/2 cup honey
1/2 cup light corn syrup
1 cup peanut butter (crunchy is best!)
1 teas. Vanilla
*I use a disposable turkey pan for making popcorn. You can get them at the Dollar Store for $1.00. Otherwise, use 1 very large bowl, or 2 large bowls.
**Another hint: have your peanut butter and vanilla measured out before you start the mixture boiling!
Pop the popcorn, and place in a large bowl. Remove kernels.
Butter sides of a large 1 1/2 qt saucepan. Combine sugar, honey, and corn syrup in pan. Bring mixture to a boil, stirring constantly! Boil hard for 2 minutes, without stirring. Remove from heat.
Stir in Peanut Butter and vanilla until melted.
Immediately pour over popcorn mixture, stirring to coat well. Cool; break into bite size pieces.
***Chocolate drizzled over the top of the popcorn is divine. Melt some chocolate chips in the microwave and spoon over the peanut butter popcorn. Mmmm....

The popcorn will stay good for up to 2 weeks if stored in an airtight container... but I don't think it will last that long!
