Week 25 Meal Plan!

I can't believe that we've reached 25 meal plans! I hope you are finding them helpful!

This week I have a Thai recipe for you. Some of the ingredients will have to be found in an Asian store. If you can't find one close to you, let me know and I'll figure out some substitutions for you.

Also, you'll notice there is a lot of rice! It wasn't planned, but rice is cheap, right?  I prefer Jasmine rice for the Thai meal, but you can use Minute Rice for all of it if that's easier.  Since there is so much rice, the dessert of the week is.... Rice! Use your leftovers to create Tropical Rice Pudding! Yum!   Enjoy!

Day 1: Lasagna, french bread with garlic seasoning, and a green salad.
Day 2: Chicken noodle soup!
Day 3: Beef Curry in Sweet Peanut Sauce, served over rice. Make extra for your dessert!
Day 4: Chicken and Rice with your favorite veggies
Day 5: Spinach Feta Pasta with Rosemary Foccacia Bread
Day 6: Enchilada Style Burrito with Black Beans and... rice!
Day 7: Leftovers!

Dessert: Tropical Rice Pudding

Week 24 Meal Plan

Good Morning! I hope you got to sleep in this fine Saturday! It's my one day a week to sleep in, so I took full advantage of it. When you're a mom, you get sleep when you can, right?

This week features a lot of familiar favorites. Nothing that I haven't made before and certify that it's good! I have 1 fancy meal, with a meal using the leftovers, plus a few other quick meals. The dessert this week is a family legend! I hope you enjoy all of the meals!

Day 1: Fancy Meal: Roast Beef with Basil, Oregano, and Garlic. Served with 30 minute Baked Potatoes and a Salad.
Day 2: Leftover meal! Use the leftover beef to make Baked Creamy Beef Taquitos, served with Black Beans and salad.
Day 3: Ham and Bean Soup in the crockpot. You must make this amazing Cornbread to go with it!
Day 4: Margarita Chicken (no alcohol!) with Balsamic Black Bean Salsa, and Cilantro Lime Rice with Pineapple.
Day 5: Chicken Salad Sandwiches. The chicken can be cooked at dinner time, or put it in the crockpot for an easy meal!

Dessert: Grandma's Famous Carrot Cake

The Menu, Recipes, and Shopping List can be downloaded from Google Docs.

Enjoy!

Week 23 Meal Plan

Good Morning! We've made it through another week. I hope your New Year's is going perfectly!  We had a hectic week of family in town. My oldest was baptized last Tuesday, and we couldn't be prouder.

This week's menu plan is mostly new meals! Dust off your slowcooker because you are going to need it.  I hope you enjoy!

Day 1: Healthier Spinach Turkey Meatloaf with Tomato Salad. Served with Garlic Crockpot Potatoes and a salad.
Day 2: Pineapple Teriyaki Crockpot Chicken on sandwich rolls or tortillas. **Note: The original recipe did not have Teriyaki sauce. My mom made this and was worried about the teriyaki AND the salsa together. She said it looked funny, but tasted really good! She served it in homemade tortillas.
Day 3: Indian Cilantro Beef with Coconut Rice and Nom Nom bread (Naan)
Day 4. Perfect Tomato Basil Soup with bread
Day 5: Pesto Pizza or Kids make-it-yourself pizza
Day 6: Southwestern Cobb Salad from Our Best Bites. I will be deconstructing this for my kids!
Dessert: Vanilla Bean Scones from SugarCrafter
Special item: Horchata (A special treat for my husband! He liked it, so I thought you might as well.)

As always, you can download the menu, recipes, and shopping list here.

Week 21 Meal Plan

Welcome to week 21 of meals! I'm going to try to start doing lower-cost, pantry meals during the holiday season. I know money is tight!  These are all meals that I keep most of the ingredients for. You might not, but they are still pretty low cost.  Enjoy!

Day 1: Fry Bread Tostados. Fry up some fry bread, and top with beans, salsa, cheese, lettuce, etc! Yum! This was  my favorite "fair" food growing up in AZ!
Day 2: Baked Potato Soup by Our Best Bites. I crave this soup! Serve with a Salad and Crusty Bread
Day 3: Pancakes with Fruit and your favorite breakfast sides: Bacon, eggs, etc.
Day 4: Maple-Pecan Chicken with Fast Baked Potatoes and a wonderful Fall Salad. (Or, serve with leftover Baked Potato Soup!)
Day 5: Spaghetti... with jarred spaghetti sauce... this is your lazy night! Serve with a salad with copycat Pesto dressing. **the dressing will have to be made the night before!
Day 6: Taco Soup. A 30-minute meal, or cook in the crockpot all day! Serve with tortilla chips, sour cream, and cheese!

Week 20 Menu Plan

This is a good eating week. All the meals, except one, (It's a new one) are my favorites. They are the meals that I make over and over again. I hope you love them just as much as my family does!

One note- you will notice a lot of chicken this week. However, 2 of the meals can be made without it, and 1 ham meal can be made without that protein as well. Chicken is cheap, easy, and versatile! Love it!

Day 1: Teriyaki Steak with Seasoned Garlic Mashed Potatoes and Salad
Day 2: Monterrey Chicken with a salad or veggies
Day 3: Fettuccine Alfredo w/ or w/out Chicken, crusty bread, and veggies
Day 4: Cilantro Lime Chicken Burritos with Cilantro Lime dressing
Day 5: Chicken, Black Bean, Spinach Enchiladas
*I finally  made this dish! We thought it was good, and despite looking hard, it was pretty easy. However, it just didn't have enough flavor for us. If I do it again, I'll add tons more cilantro and jalapeno. Maybe add some peppers or spices in the enchiladas themselves. I made a little tomato and avocado salad to go on top and that made a big difference. (Chopped tomatoes and avocados, salt, pepper, and cilantro)
Day 6: Egg Burritos

Dessert: Caramel Apple Cheesecake Bars with Streusal Topping

Week 19 Meal Plan

Here we go again! I missed last week, and I apologize. I was very sick in bed. That being said, I didn't do a lot of cooking.  This week's meals mostly come from my "Try now" recipe folder from other wonderful food blogs. They are all linked so you can explore new blogs! Make sure to come back here though! :)  I'm writing this a few days ahead of the posting, so hopefully I'll have the time to try some of these meals before you do! (I've had Day 6 many times and it is absolutely fabulous! So, start there!)

Day 1: Slow Cooker Chili with Crusty Bread
Day 2: FANCY MEAL: Beef Roast with Parmigiano and Cream with Rosemary Foccacia Bread and Strawberry -Lime Shortcakes with Coconut Cream for dessert.
Day 3: Pumpkin Pie French Toast with bacon and eggs (or your favorite sides!)  **This was good, but not fantastic. I'll give it 3 stars out of 5! Recommend adding extra Pumpkin Pie spice.
Day 4: Pasta with Butternut Parmesan Sauce and 1-hour rolls with a green salad.
Day 5: Pork Chalupas served Mexican style in a burrito or as a salad. This was good, but the beans didn't cook all the way, and it was too salty! I've adjusted the recipe for less salt!
Day 6: Ritz Cracker Chicken with Steamed broccoli

Dessert: Graham Cracker Snickerdoodles

Week 18 Meal Plan

Here we go again! I have to be honest. I'm actually falling behind on following my own menu plans! Eek! I buy all the ingredients, and then don't cook them... or make another meal entirely! Oh, well, at least I've put some thought into it, right? :)

This week is mostly oldies, with 2 new meals that even I haven't tried. So, if you hate them, don't yell at me! :)  If I get around to making them in the next few days, I'll let you know what I thought.

Week 14 Meal Plan

Last week I had my very cool SITS day feature.  One of the most popular blog features were my menu plans. I haven't actually done a new one for awhile, due to lack of interest, but since it sounds like there IS interest, I'll give it another go!

This week features all new meals, or meals featured on the blog so long ago that no one saw them! For those of you who are new: I don't plan certain meals for certain days.  I just plan out 6 meals, plus 1 dessert, and make them in any order I want. That way, I'm not as tied in to a plan. It makes it a little easier for me to follow.  Make sense? Okay! Here we go!

Day 1: Smokey Black Bean Soup with salad and/or crusty bread
Day 2: Skillet Pork chops with carrots and potatoes. Serve with bread or salad.
Day 3: Grandaddy's Tostado's. You will love the sauce on these! Serve with Black Beans and Rice.
Day 4: Monterrey Skillet Hamburgers with fries. (A 30-min. meal!) ** See note below!!
Day 5: Beef Tenderloin with a Mushroom and Garlic Butter sauce. Serve with Romaine Parmesan Salad. This is a fancy meal for a fancy  night- but takes only 30 minutes to make!
Day 6: Waffle Fruit Bar with sausage or bacon.

Dessert: S'mores Stuffed Brownies ** See note below!

The complete menu, recipes, and shopping list can be downloaded here.  Enjoy!! I would love to hear if you try any of these!

**Edited on Sep. 7, 2010: I made the Monterrey Hamburgers last night. I was disappointed. All of those wonderful flavors added in... and somehow the burger was very bland. :(  If you want to substitute another burger, try the Grilled Cheese Hamburgers. They are my favorite!

**S'mores Stuffed Brownies. These were good, but not what I was expecting. I couldn't taste the graham crackers, the chocolate just melted in (but who can get enough chocolate?), and the marshmallow's caramelized. Basically, it was a normal brownie with a hint of chewy marshmallow. So sorry to disappoint again!  If you are dying for a good brownie recipe, try my Dark Chocolate Brownies with Hazelnuts!

Week 13 Menu Plan

Here is what I am planning on making for my family this week. My health issues have been acting up, so I haven't really been making meals. Since my husband isn't home most night for dinner, we have been lazy! Enough is enough though!! Time to get back to good, homemade meals. Plus, we should be getting a BBQ this week, so I'll have to try it out! (All of the BBQ meals can also be baked) Try some of these meals with me this week, and let me know if they are keepers in your house!

Day 1:
Chicken Satay with Jasmine Coconut Rice and Steamed Broccoli
Day 2: Pork loin with Chimichurri Sauce on the BBQ. Grilled Potatoes and veggies
Day 3: Lime and Chili rubbed Chicken breast. Warm Lime butter tortillas and Pineapple Paradise for dessert. (All new meal from Betty Crocker Quick and Easy Cookbook)
Day 4: Homemade Pizza
Day 5: Baked Breakfast Taquitos. Freezing leftovers for quick breakfasts. (New meal)
Day 6: Chicken and Bacon Pastry Pockets (New Meal)

Recipes and Shopping list

Week 12 Menu Plan

I just made a menu plan for my family, and thought I'd share it here. I used to do plans for my readers weekly, but life has gotten in the way, and interest in the plans seemed to ebb. You can find all of the old plans up above under "menu plans" on the tab bar.

We are going to be trying lots of new recipes this week! I'll include the link to the original recipe here, and then I'll be back to critique them. If you try it before me, let me know how it was for you!

When I make menu plans, I don't plan the days. I just plan a list of meals, shop for them, and then cook them as they sound good. Most times, my meal plan lasts for more than a week because of leftovers, or just because of lazy Mac N Cheese nights.

Day 1: Garlic Chicken Pasta with Spinach from Recipe Shoebox with Perfect Dinner Rolls from Mels Kitchen Cafe
Day 2: Delicious Black Bean Burritos
Day 3: Mom's Spaghetti An old favorite! With salad and homemade bread
Day 4: Meatloaf Muffins with potatoes and salad
Day 5: Trinidadian Chicken Curry from Pioneer Woman
Day 6: Chicken Soulvaki pitas with Tzatziki Sauce from Sandra Lee at Food Network
Dessert: Lime and Coconut Crumble bars from Baking Bites

You can find all of the recipes and a shopping list here!

Week 11 Menu Plan

Week 11 Meal plan is here! Now, you may have noticed that I'm not doing a weekly plan; more like every other week. If you would like them more often, please let me know. We're at the point where we'll probably be having repeat meals.

This week is a little bit of a "preview" week. There are some recipes that I plan to post on the blog, but are not here yet. So, you get to try them first! I also assigned the meals by "day 1" instead of days of the week. I find that when I make my personal meal plans, I often make them out of order. I don't think it matters, as long as you've gone shopping!

As always, I appreciate any input!

Day 1: Spinach Feta Pasta with Rosemary Focaccia Bread
Day 2: Spicy Crockpot Shredded Pork in either Burritos or Salad
Day 3: Ritz Cracker Chicken with Oven Roasted Broccoli
Day 4: Leftovers
Day 5: Leftover pork in Taquitos with a Salad
Day 6: Maria's Sunshine Salad
Day 7: White Bean and Chicken Chili
Dessert: Dark Chocolate Hazelnut Brownies

Download the menu, recipes, and shopping list from Google Documents!
